I am making a cake that calls for 3 eggs. the girl Iam making it for is a vegan. Is there an egg substitute I can buy to put in the cake mix? Do I have to go to a special store or will a supermarket have it? Thanks

Ener-G Egg Replacer – follow directions on box. (you can find it at most grocery stores)
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

If there’s a Whole Foods in your area, they will have Ener-G Egg Replacer, which is a powdered mix of starches and leaveners. You could try a conventional grocery store and look in the baking goods section. It’s an ugly orange-ish box that looks like it’s stuck in the 70s.
Anyway, you take 1/2 tbsp powdered Replacer and 2 tbsp water per egg (so 1-1/2 tbsp powder and 6 tbsp water for your recipe), mix well until it develops a goopy consistency, and then mix with the batter.
In a pinch, you can use applesauce (3 tbsp applesauce per egg) or 1/2 banana per egg, but you won’t get the “lift” you get with eggs or the replacer. If your store sells silken tofu (the kind that comes in the aseptic boxes), you can use 1/4 cup silken tofu per egg.

1/2 banana blended until smooth or mashed well= 1 egg
1/4 cup soy yogurt = 1 egg.

You can buy egg replacer, but the best egg I have found is:
1/2 tsp. baking soda
1 tsp.baking powder
2 tblsp flour
3 tblsp water
Mix them together in that order. Makes one egg. Its really easy because all that is stuff you use in baking anyway. And it tastes a lot better than banana or applesauce and all that stuff.

easy vegan chocolate cake
Ingredients
3 cups flour (680 grams)
2 cups sugar (450 grams) (read this first)
6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc’s = 10 ml)
1 teaspoon salt (5 cc’s = 5 ml)
3/4 cup vegetable oil (200 cc’s)
2 tablespoon vinegar (30 cc’s)
2 teaspoon vanilla (10 cc’s)
2 cup cold water (480 cc’s)
Directions
Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake two greased, floured pans at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. When cool, frost it.

Ener G is a powdered egg replacer.
Substitute for 1 egg:
2 1/2 tablespoons of powdered egg substitute plus 2 1/2 tablespoons water
1/4 cup liquid egg substitute
1/4 cup silken tofu pureed
3 tablespoons mayonnaise OR half a banana mashed with 1/2 teaspoon baking powder
1 tablespoon powdered flax seed soaked in 3 tablespoons water

1 teaspoon baking powder
1/2 teaspoon of baking soda
2 tablespoons flour
3 tablespoons water
Works really well in cookies. I have it listed as good to use in cakes as well

Everyone else listed a pretty good selection of vegan egg replacers but left out an important note — Cake mixes tend to not work well with egg replacers instead of eggs. You’ll probably fare better using a vegan cake recipe, like the chocolate cake recipe posted.
