I’m not a vegan but my boyfriend is. I love baking, and would love to be able to make things we could both enjoy, but I don’t want to go out and but things like egg substitute, vegan margarine, ect… I’m having trouble finding recipes for vegan baked goods (coffee bread, cookies, cake, ect) that I could just whip up using stuff around the house…help!

I’ve never tried any of these but there are some recipes here, that look good. Most have to do with bananas but there are a few others.

It’s easier than you think. Do you have a grill? Marinate veggies like green pepper, carrot, potatoes and portabella mushrooms in two parts olive oil and one part red wine vinegar, then grill for half an hour

Just substitute a half of banana for 1egg, and use soymilk instead of real mill!

Weird vegan ingredients? You realize regular margarine is nothing but processed crap, right? And vegan margarine is pretty much the same thing.

I think it’s great that you are trying to accommodate your boyfriend’s lifestyle. I didn’t become vegan until my husband and I had been married for a few years and when I was pregnant, he started to change more too. (He still eats meat and cheese and things I would consider junk, but he doesn’t share the overly junky things with our 21-m-o daughter and we occasionally buy organic cheese for her.)
Ask your boyfriend what he does, uses, etc. He should be happy to help you and he would be the best source of what he likes and doesn’t like. (Example: he might prefer apple sauce for an egg sub instead of the En-R-G egg replacer.)
Apple sauce (1/4 cup) can be substituted for eggs, as well as bananas. Soy milk can be substituted for cow’s milk. I use Smart Balance Light spread in lieu of the chemicalized hydrogenated margarine. (I don’t care if it has partially hydrogenated oils and less than .5% trans fat. It’s still too much.) Also, I use whole wheat flour in lieu of white.

For the cake, I substitute apple sauce for the oil and put in about a dozen generous tablespoons of cocoa. Because of the sugar and apple sauce in the cake, I cut back on the frosting sugar, especially if I use chocolate soy milk instead of vanilla.

Define “weird vegan ingredients”.
I use Ener-G Egg Replacer for baking. There’s nothing weird about a mixture of starches and leaveners. You can get it at Whole Foods or a natural foods store. The stuff lasts forever.
Plain soy milk can be substituted in equal measure for cows’ milk. Many conventional grocery stores carry them. Look for plain unsweetened soy milk in the 32-oz tetra packs.
Earth Balance is GOD. It is the best. I use their spread in potatoes and on bagels and their Buttery Sticks for baking. Just zap in the micro for 20 seconds or so to soften.
If you really want to do something special for your boyfriend, you’ll suck it up and get some stuff.

Ge a cookbook. I have tons of recipes that don’t require any “weird” vegan foods. I have an incredible vegan chocolate chip cookie recipe that only uses ground walnuts with a little oil in place of the eggs.
You can find that on VegetarianTimes.com under “The heart-healthiest chocolate chip cookies”. They really taste like junk food,not health food. My husband brought them, to work,where no one is veg*n and everyone devoured them,including the junk food addict.
Check out other recipes on VegetarinTimes.com. Just put in for vegan food. They often don’t use tofu and such,because a lot of people don’t want them.
Otherwise,I have cookbooks like Vegan Planet,La Dolce Vegan, and others. They have vegan cakes,cookies,breads,While,some recipes do call for vegan substitutes,a lot of them don’t.It’s just good,simple meals made with whole foods. Also,go online .I always just go to google and type in vegan recipes. I get so many,I don’t ever know where to start. You may have to look around a little bit for sites that don’t use a lot of tofu,etc,but there are tons out there. In fact,very few vegan recipes call for substitutes.
