I know a vegan that uses flax seed as an egg replacement, but can you use flax meal as well?
Does anyone have any good ideas for baking with it as well?

I have never heard of using flax meal as an egg replacement, but I do bake with it. I put it in muffins, pancakes, breads, etc…anything bready like that. Sometimes I sprinkle it on my cereal and in my yogurt.

yes. put it in water, and let it sit for an hour or so, until it becomes thick

Flax meal and water is a great egg replacement in most baking recipes. For each egg called for use 3 tablespoons of hot water with 1 tbsp of flax meal, stir then let sit for a few minutes until it thickens. Add it to the other ingredients as you would the egg(s) following recipe instructions.
I use it in muffins, cakes and sweet bread recipes (banana, zucchini, etc). It’s a great way to make these items vegan as well as boost their nutritional value with the added fiber and healthy fats found in flax.
