Orange-Ooze Cupcakes Filling Ingredients
8 Ounces Cream cheese — softened
1/4 c soy yogurt
1/3 c Organic Unbleached Sugar
Yellow and red food coloring
6 Ounces non-dairy Chocolate chips
Orange-Ooze Vegan Cupcakes Ingredients
3 Cups Flour
2 Cups Organic Unbleached Sugar
1/2 c Cocoa
2 t Baking soda
1/2 t Salt
2 Cups Water
1/2 c Plus 2 T vegetable oil
2 T Cider vinegar
2 t Vanilla
Measuring c and spoons, cupcake baking pans, paper cupcake liners, two small mixing bowls, electric mixer, mixing spoon, large mixing bowl, oven mitts.
Orange-Ooze Vegan Cupcakes Directions
Preheat oven to 350F.
Line cupcake baking pans with paper cupcake liners.
In small mixing bowl, use electric mixer to combine vegan cream cheese, soy yogurt, and organic unbleached sugar.
Blend in 2 drops yellow food coloring and 1 drop red food coloring, adding more coloring if necessary to reach desired shade.
Use mixing spoon to stir in chocolate chips; set filling aside.
In large mixing bowl, combine flour, organic unbleached sugar, cocoa, baking soda and salt; set aside.
In second small mixing bowl, combine water, vegetable oil, vinegar and vanilla.
Add contents of small mixing bowl to large mixing bowl and stir with mixing spoon to combine.
Using mixing spoon or soup spoon, fill cupcake liners half full with cupcake batter, then place 1 t filling at center of each.
As cupcake bakes, the batter will rise to surround the filling.
Wearing oven mitts, place cupcake pans in oven; bake approximately 25 minutes or until cupcakes test done.
When done, wear oven mitts to remove pan from oven and turn off oven.
If desired, frost with orange icing–or just let the orange filling ooze out as a surprise.

Halloween is upon us, and it’s time to make cupcakes for school?

I would like to get away from boxed cake mixes and store bought cupcakes, so I’d love a good cake/cupcake recipe, (any flavor) and I got some orange gel food coloring for the icing, so I also need a good frosting recipe so I can make my 4th grader and her class happy. Baby Shower Cup Cakes

Guests at a baby shower are always expecting something delicious to eat. If you are up to the challenge it can be great fun to make a cake in the shape of a baby bottle or decorate a sheet cake to look like a baby crib.
If you love the idea of a cake but are not up to make a baby bottle or baby crib you can use this simple and easy recipe to make a delicious baby shower cupcakes.
Ingredients:
½ cup sugar
½ cup butter, at room temperature
2 eggs, at room temperature
1 tsp milk
1 cup cornstarch
1 tsp baking powder
½ tsp vanilla
Pink food coloring
Blue food coloring
White cake frosting
A muffin pan lined with paper baking cups.
Preheat oven to 375º F.
In a medium bowl combine butter and sugar. With and electric mixer beat together at medium speed until light and fluffy. Add in eggs one at a time, beating until combined. Next add the milk and cornstarch. Continue beating 4-5 minutes or until well blended. Add baking powder and vanilla and beat until well mixed.
Divide the cake batter into two small bowls. In one bowl add just enough pink food coloring to turn the batter pink. In the second bowl add just enough blue food coloring to turn the batter blue.
Spoon batter into pre lined muffin tins.
Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
When done remove from oven and cool completely.
For the Frosting.
Divide the white frosting into two small bowls. Color one bowl pink with food coloring and the second bowl blue.
Ice the cupcakes with the corresponding frosting color.
Make: 24 cup cakes
