Chocolate Peanut Butter Vegan Cupcakes Ingredients
2 c Bisquick
1/4 c Organic Unbleached Sugar (granulated)
1/4 c soy yogurt
2/3 c Water or plain unsweetened soy milk (make sure soybeans and water are the ONLY ingredients)
2 T Creamy Peanut Butter
1 oz non-dairy chocolate chips
1 1/2 T margarine (80% fat is best)
1/2 c organic unbleached sugar
1/2 t Vanilla
1 1/2 T Hot water
2/3 c Chopped peanuts
Chocolate Peanut Butter Vegan Cupcakes Directions
Heat oven to 400.
Grease bottoms only of 12 muffin cups, or line with paper baking cups.
Mix baking mix, organic unbleached sugar, soy yogurt, 2/3 c water and the peanut butter; beat vigorously 30 second.
fill muffin c about 2/3 full Bake unitl golden brown, about 15 minutes.
Heat chocolate and margarine over low heat until melted.
Stir in organic unbleached sugar, vanilla and hot water.
Spread about 1 t chocolate glaze over top of each muffin; dip into peanuts.

Peanut-Butter-Filled Fudge Vegan Cupcakes Ingredients
Batter: 1 c Unbleached flour
1 c organic unbleached sugar; packed
1/4 c molasses
1/3 c Cocoa powder; sifted
3/4 t Baking soda
1/4 t Salt
1/4 c Margarine (80% fat is best); softened
1/3 c plain unsweetened soy milk (make sure soybeans and water are the ONLY ingredients)
1/4 c soy yogurt
1/4 c apple sauce

4 oz Fat-free vegan cream cheese -softened
1/4 c Peanut butter
1 T agave nectar
1 T plain unsweetened soy milk (make sure soybeans and water are the ONLY ingredients)
2 t Pure vanilla extract
Peanut-Butter-Filled Fudge Vegan Cupcakes Directions
Preheat oven to 375.
Prepare 12 muffin c with cooking spray and flour; set aside.
In a mixing bowl, combine flour, brown organic unbleached sugar, cocoa powder, baking soda, and salt.
In another mixing bowl, combine margarine, 1/3 c soy milk, soy yogurt, and apple sauce.
Mix dry ingredients with wet ingredients just until moistened; set aside.
In a smaller mixing bowl, combine vegan cream cheese, peanut butter, agave nectar, remaining soy milk, and vanilla extract.
Place 2 T batter into prepared cups.
Spoon rounded t of vegan cream cheese mixture into center of each.
Fill c half full with remaining batter, 1 T each.
Bake for 20 minutes.

my daughters 7th bday party is a week from friday. we are all vegans, so it can be a bit difficult to plan party menus, esp. for picky eaters (which many kids this age are) we have checked w/ parents, no allergies on any of these items, and this is the finalized menu:
make our own pasta with a simple recipe, which my daughter and some of her other friends loved doing.
veg marinara sauce
magarine
veg pesto
apple fries w/ caramel dipping sauce
pb and js cut into fun shapes via cookie cutters
chips
various drinks
decorate your own vegan cupcake
and for breakfast (it’s a sleepover)
vegan waffles (taste normal)
margarine
various jams/fruit spreads
peanut butter
syrup
various drinks
does this seem like a good menu?
**** please no flak about the vegan lifestyle. my kids are healthy and fine and we will not serve animal products.

we always have fruit avaliable, and i forgot to mention we’ll have sorbet for dessert. and of course we’ll do all the typical bday party stuff.

I just recently purchases this cookbook and for my first recipe I am going to make Basic Chocolate Cupcakes with Peanut Butter Buttercream Filling and topped with Chocolate Ganach for a friend’s birthday in a couple of weeks here. I was wondering if anyone has tried these recipes and if they can really pass for non-vegan cupcakes. I tried a cupcake recipe from Vegan with Venegence (the Lemon Gem cupcakes) and they were absolutely NOT GOOD, so I’m worried about trying so many cupcake recipes from the same authors. I’ve heard they were good from a couple people, but I just wanted to get some additional opinions!

Vegan Cupcakes Take over the World?

I just got the book yesterday, and I promised my friend who bought it for me that I’d surprise them with cupcakes.
Well he as well as 2 other friends and a parent are going to Cornerstone (a big concert thingy) that is 6 hours away. I decided to make them cupcakes because My friend is vegetarian and the others are trying it for the week. I thought vegan cupcakes on the trip up would be nice. Now they’re all 16 and 17 and the dad is like 40something. Do you think 12 (3 per person) is good or 24(6 per person)?
Next question. Can I take these recipes and just make a cake instead? (Because it is a birthday party thing and I thought a nice vegan cake would be lovely.)
I’m going grocery shopping tonight so if answers could be in soon, that would be more than amazing. Thank you.
They’re going to be in a car for 6 hours, I was going to save the cake for after the trip and give the cupcakes on the trip. And the whole book is Vegan, so I have the icing too.
I chose to make 36 instead, that gives them a lot to eat, and 3 flavors to pick from. Tell me out of this list which sounds best:
