what do vegans use in baking to substitute eggs and milk?

AS YOU ALLLL KNOW… (haha jk) I am not a vegan. however, I am not opposed to lowering my use of animal products, and I was wondering tonight as I baked some black bean brownies (recipe at www.allrecipes.com) I wondered what vegans use when they bake to substitute eggs and milk, and do you get the same results as the eggs and milk give? I love sy products, especially soy milk, but I can only tolerate in small amounts
but I would not be opposed to using soy milk in baking.
does the silken tofu give the volume eggs do?
is there a egg substitute for vegans?

My son is recovering from a bad bout with celiac disease (took several months to get diagnosed) and has a host of other dietary reactions at the moment, among them a bad reaction to eggs. He is vegetarian, gluten-free, and at the moment, lactose and egg-free. He is getting protein from other sources and is taking a multi-vitamin, but I’m wondering about some good ideas for egg replacement. For some reason, every “egg substitute” I can find on the market is “made with real eggs”.
I’m looking for something to use in baking, but he also would like to have something that’s at least fairly similar in consistency to scrambled eggs or an omelet. (He’s fine with putting soy cheese & veggies in for flavor.) This is fairly new to us (no dairy or egg), and I’m hoping you can help me with what to try and what to avoid
Also, any ideas that come to mind for snacks that don’t contain gluten, lactose, or eggs are totally welcome!

I am checking into support groups, I just haven’t found any in our area as of yet. Since vegans are egg-free as well (since eggs are an animal product) I’m also asking here.

I’ve been a vegetarian for many years and now I’m considering turning vegan. I was wondering though, what kind of replacements there are for milk and eggs, like for making pies, cream, etc.
I eat a lot of soy, but I don’t like soy milk at all, neither rice milk. I would probably get used to it though, but can you actually make cream of that? I reckon you can’t replace everything, but then, I don’t want to drink real milk anymore, after learning how even milk cows are treated and what happens to their babies.

Does anyone know what Vegans use as a substitute for butter? And have you tried it before? Does it taste good to regular butter eaters?

Keep in mind im not a fan of peanut butter or any nuts. I never ever ever have breakfast in the mornings–I know thats bad and thats why I want to fix it. None of my family is vegan so they dont want to go out and get a bunch of fancy expensive ingredients for me. Ive tried making some smoothies but they never turn out the way I planned.(banana,chocolate soy,crushed ice–not that tasy :\ ). Something simple that I could call up my mom and say just pick up _ for me and Ill do the cooking.
The thing is your supposed to have huge breakfasts and lighter meals throughout the day but I do the opposite. When it comes to dinner and lunch Im fine because I have tons of great soups,veggies and rice and tons of recipes that appeal to me. With breakfast nothing really catches my eye.
* Reccomended egg replacer?!
Also I have school in the morning so maybe the night before(Im usually very busy with homework) I could make some type of easy muffins??!
Please help!

I want to know what products you have come to rely on as a vegan that makes your life easier?
Cooking items? For instance, my processor makes cooking amazing! As does my spice rack.
Cosmetics/Hair care? I adore Avalon Organics- their bath gel doubles as bubble bath and I love functionality like that.
Faux meat/dairy products? For instance, I cannot live without my Smart Balance butter. I use it for a lot foods that I cook with or even just to make toast. Ener-G Egg replacer is another that I couldn’t live without. Ever since using it, I wake up wanting to make pancakes.
Clothing? Do you know some awesome brands at not-too-terrible prices? Where did you get them?
Books? I enjoyed “Becoming Vegan” because of the scientific/nutrition nature and “How it all Vegan” for cooking help!
Anything else that has made your vegan life just blissful???
Veggie Tart: I am looking at my Smart Balance Light Butter with its certified vegan label/gluten free/parve labels. It is indeed, vegan. = ) Not all of their brands are but the Light is.

I like making things at my dinner parties or potlucks with my friends. My bf too because he is not vegan he is “pescetarian” meaning he just eats fish on the meat front and he eats dairy. He is very supportive of my veganism though and he makes vegan dishes for me all the time :]
Anyway what do you love to prepare to impress them? Maybe I’m the only one who does this but I hope not. lol I like making traditional style banana pudding. It’s so easy and comes out great. It took me forever to find vegan vanilla wafers when I went vegan though. You know mom used those delicious non-vegan Nilla wafers instead and thats a no-no. I had to go without wafers for a while
I have tried several different types of vegan lasagna and loved them all. I really like this recipe I found online for tofu spinach lasagna.
VCTOTW (Is that the right acronym? lol) helped me a lot with cupcakes. They turn out so well for me. I am always so shocked at how good my food comes out because I use recipes; I don’t have that gift of being able to create my own recipes! I have like 4 cookbooks. lol
There are lots of other things but these are my favs. Everyone thinks all vegans are obsessively healthy and major hypochondriacs. I like to prove them wrong. I am vegan for moral reasons it really has nothing to do with eating non-processed foods (cuz I love me some packaged veggie meat mmm mmm) or picking berries in the forest. And they love it :]
