Use some yogurt or sour cream and a little canola oil it will work.Eggs are a leavener so if you use sour cream and add a little extra baking soda you will get a light fluffy cupcake. Oh yes adding some applesauce will also give the consistency that eggs add to a recipe or mashed banana works too.
