Question #1:

How do I properly curdle soy milk? I use soy milk in cupcake recipes and...?

I use soy milk when I make cupcakes, well I'm starting to anyway since I like to bake vegan so that even vegans can eat my cakes/cupcakes, and I think I am not curdling the soy milk properly because i still taste the soy milk even after I bake the recipes...this happens only when I bake vanilla cupcakes...when I make chocolate cupcakes I use cocoa powder, and I think that well covers up the soy taste. I also get the same result even if I use almond milk...i've yet to try rice milk...but I assume it'll be the same if rice milk has an aftertaste.

Anyways, I put salt too and that doesn't cover up the soy taste...and I ahve tried several recipes...is there even a way to cover up the soy taste or are all recipes that use soy milk just like that? so...I was wondering if maybe, I'm just not curdling the soy milk properly, using a teaspoon of vinegar

I've been a vegetarian for just over two years-ish. I'm not entirely sure, I don't really count the months. But anyways. I'd like to be a vegan, I think. But I'd like an extended list as to what I cannot eat if I do decide to make the switch. I already don't eat meat, gelatin, lecithin (which I'm not sure has animal in it- but it sounds like a shady ingredient).

So what can I not eat anymore?
Be specific and elementary. Please.

Ooh! And links or messages to your favorite cookie/cupcake recipes please. That would be great. Because I'm really going to miss those.

i have tried other vegan vanilla cupcake recipes, but i ALWAYS face two problems:

1) They always come out too moist - not fluffy and soft

2) i can still taste the soy/almond milk

i follow the recipes exactly every time...does anybody here have experience with vegan baking? can anybody help? thanks so much in advance for any help
i don't really think its the oven temperature because when I bake the store bought cupcake mixes they turn out fine...I think...could using the cupcake paper cups be a problem?

lol i didn't even bother searching on google. i knew that a whole bunch of websites were going to come up, but this is the first time i'm making them. so i wanted a website someone has used before that they know is good.

Calling people of all diets... does this sound like a good idea?

So I'm vegan, and I'm part of this animal welfare organization at my high school (PAW), and the prez was trying to organize an assembly about vegetarianism/veganism, just to help people get informed (food options, environmental, health, etc). We're going to try to be as un-PETA-ish as possible, not going to be rude or yell or anything. I'd rather not speak/present, because I'm really quiet, but I feel like I should do something.

I was thinking of setting up a table where people leave the auditorium, with vegan goodies. When people think vegan, they usually think 'vegetables, tofu', and that really gets on my nerves sometimes.

So I was just going to have stuff like mini banana nut muffins, pumpkin spice bread, peanut butter-chocolate pillows, cupcakes with buttercream icing, etc, for people to try, and just see that vegan food isn't disgusting.

And have little slips of paper with the recipes for the food on it for people to take home to try?
(I'd be making most of the stuff, and all modesty aside I'm pretty darn good at making junk food :))

Is that rude or obnoxious? Too in-your-face?

Do you think people would try it (they're usually pretty critical/wary of vegan food)? Its an all-teen-girls school, so I feel like if I put out chocolate/junk, it would probably be eaten, but I'm not sure.

Do you have any suggestions as to stuff I should do?

Fransesca, I like that :) I'm not as good with healthy food as I am with baked goods, but maybe samples of vegetable samosas, pasta salad, spring rolls? Thanks for the idea!

What is a recipe for sugar-free, fat-free cupcake icing? I do not have any vegan milk powders. I have agave, flour, arrowroot, rice milk, peanut butter, tahini nut butter, and flax seed. I can buy more things if i need, but i'm trying not to add any sweetned besides agave (or maybe brown rice syrup). Any ideas?

They are vegan recipes...

are there any common baking mistakes that might cause a cake/cupcakes to turn out overly moist and not nice and fluffy? I followed the recipe exactly several times, but I'm not satisfied with the texture...so, the recipe is obviously not THAT great (though, the flavour is!..just the texture isn't). any suggestions? This happens with all the recipes I've tried =( so I must be doing something wrong!

i really enjoy baking cupcakes and i would love to have my own cupcake shop someday. but first i think it would be best to get some experience and learn everything i can. any advice on recipes or frosting tips? vegan recipes?

My First Vegan Baking Book?

I've been a Vegetarian for about a month now and I feel great. I consider myself more of a Vegan because I don't consume Eggs or Dairy. When I used to eat meat, and even now, I have a love for baking(I'm considering going to Chef School as a Pastry Chef). Problem is, I don't want to use things like Butter, Lard, Eggs, that sort of thing. I was thinking what are some good baking books that don't rely heavily on vegan products?
It's really hard for me to find Vegan Products. I live no where near Natrual Food Stores or Whole Foods. Would these books be good to try?

Can I replace soy milk with regular milk in a vegan recipe?

I want to make vegan cupcakes, but I'm all out of soy milk.
I'm not vegan or anything, so regular milk isn't a problem for me. I'm just wondering how it will affect the recipe. It originally calls for soy milk and apple cider vinegar (to curdle the milk). Will it still work with regular milk (lactose-free)?

I'm dying to get that book. I won't be able to get the book until next month. Until then does any one have a favorite recipe that I could try. I love to bake and I'm a Vegetarian but I really want to back away from the boxed cake mixes and making desserts with eggs or butter you know?

I'm jumping back on the Vegan wagon, and I'm looking for new recipes to try! I've got How It All Vegan, Vegan with a Vengeance, and Vegan Cupcakes take over the World, but I've only made selected recipes from each book. Suggestions from there, from other books, or from the internet would be fabulous!

Also, I really don't care what you have to say to bash Veganism, and I don't want smart-alec remarks.
