What do vegans use instead of milk and eggs?


I’ve been a vegetarian for many years and now I’m considering turning vegan. I was wondering though, what kind of replacements there are for milk and eggs, like for making pies, cream, etc.
I eat a lot of soy, but I don’t like soy milk at all, neither rice milk. I would probably get used to it though, but can you actually make cream of that? I reckon you can’t replace everything, but then, I don’t want to drink real milk anymore, after learning how even milk cows are treated and what happens to their babies.

    Some people don’t like soy milk because they haven’t tried the right brand for them yet. There are many brands of soy I don’t like, maybe when you try a few you’ll find one you like. My fave is sungold soy or so good soy. There is also rice milk, almond milk, hemp milk, coconut milk…

    You can buy vegan creams, yogurts, custard etc. from speciality stores or you can thicken your soy/almond/rice milk using semolina (cream of wheat). Cream of wheat acts as a thickening agent, you can vary the amount depending on how thick you want it. You usually have to heat the “milk” with the semolina for a few minutes, then allow to cool or set.

    As for eggs there are egg replacers like Ener-G. I also like to use soft tofu in baking or to make tofu scramble “omelets”.

    There is a replacement for almost any thing, just try to be a bit innovative with your ingredients. It may taking a bit of getting used to, but you’ll be a pro in the kitchen before you know it.

    I’m exactly the same as you at the moment!
    Try sweetened soya milk (the one with apple concentate is nice). I did and I’m never going back to real milk!
    There is a brand called alpro who make soya dairy alternative products. They make milk, yogurt, cream and desserts from soya instead of dairy.
    If you look carefully along the margerine aisle you should also find a soya alternative to that.
    There are even alternatives to cheese (although i have never tried them) called sheese and cheezly. I bought a chedareeze from tesco the other day but i haven’t tried it yet so i don’t know what they are like.
    I think the only ting to do about eggs is cut them out or buy them from a farm where you can see how the hens are kept. There are vegan recipes for most things and they don’t taste that bad!

    if you use plain soy milk in recipes often you cant even taste the difference, and for eggs i use applesauce or mashed bananas

    well i dont know anything other than soy milk almond milk and rice milk that a vegan uses to replace milk with so you better get used to those products if you wanna be one

    There are tons of plant milks out there. Try different types of soy milk or rice milk. If you can’t find one, there’s also almond milk, oat milk, and hemp milk. I use soy milk for baking and cooking, but I don’t really drink it.

    As for eggs, if you miss scrambled eggs or omelets, you can make tofu scramble with turmeric, seasonings, and veggies.

    For baking, any vegan cookbook will have a page or so on replacing eggs. I’m a fan of Ener-G Egg Replacer, a mix of starches and leaveners. It comes in ugly orangey boxes, found in the baking supplies section of most grocery stores. The stuff, however, lasts forever. You use 1/2 tbsp replacer and 2 tbsp water per egg, mix well, and add to the batter.

    There’s also flax eggs–1 tbsp flax seeds and 3 tbsp water per egg, mixed together to form a slurry, and added to the mix.

    You can also use silken tofu–1/4 cup of tofu per egg, liquified in a blender.

    Congratulations on your decision to adopt a more compassionate diet. If more people really knew about the brutality of the dairy industry, I think there would be fewer people consuming cow’s milk. And you don’t have to feel deprived or do without. You will probably really like So Delicious coconut milk beverages. I think they are the best tasting alternative to milk. The original flavor works wonderfully in all of my baking and cooking and tastes great with cereal and in my coffee and tea. They also make a delicious coconut milk creamer which is a fabulous replacement for half and half. I use all of the egg replacements mentioned by Veggietart, and with great results. You don’t need eggs at all to make delicious cupcakes, pies, cakes, or cookies.
